Hamburger buns are made from a wide variety of doughs.
Probably the most popular form is the white bread, made
from all-purpose flour (wheat flour from which the grain and germ have been removed).
Whole wheat (or wholemeal) buns contain the bran and
endosperm that is removed from white bread. My personal favorite is the
potato bread bun, using potato as a replacement for part of
the wheat flour.
Originating in Vienna, the traditional
Kaiser roll is made from wheat flour, barm (fermented
foam), malt, water and salt. Since the Kaiser roll is a specific type of roll,
variations would not truly be considered a Kaiser. However, certain seeds--such as
poppy, sunflower, and sesame--are often sprinkled on top. A hollow Italian version,
michetta, is also made.
Cinnamon raisin bread is usually
made with all-purpose wheat flour with additional spices. It can also be made with whole
wheat (see above). Amish cinnamon bread is made with
sourdough, which adds a lactobacillus culture to the mix.
